Resumen: Pereskia aculeata Miller, popularly known as 'ora-pro-nobis' (OPN), is an edible plant species belonging to the Cactaceae family. The leaves of OPN are distinguished by their non-toxicity and nutritional richness, including, on a dry basis, 23% proteins, 31% carbohydrates, 14% minerals, 8% lipids and 4% soluble dietary fibers. The leaves of OPN also contain bioactive molecules with metabolic, anti-inflammatory, antioxidant and antimicrobial properties. Regarding their protein fraction, there are no published studies describing their extraction and chemical characteristics. Therefore, the objectives of the present work were i. to extract the proteins of the leaves of OPN; and ii. to study their physical-chemical properties before and after ultrasound, Ohmic heating and pulsed electric field treatments
